POUND CAKE

Ingredients: 3 large eggs, room temperature, 3 tablespoons milk, room temperature, 1/2 teaspoons pure vanilla extract, 1/2 cups (150 grams) sifted cake flour, 1 teaspoon baking powder, 1/4 teaspoon salt, 3/4 cup (150 grams) granulated white sugar, 13 tablespoons (1/2 cup + 1/3 cup) (185 grams) unsalted butter, room temperature

Method: Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Butter or spray with a non stick vegetable spray, a 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan. Line the bottom of the pan with parchment paper and butter or spray the paper.
In a medium bowl, whisk together the eggs, milk, and vanilla extract.
In the bowl of your electric mixer, with the paddle attachment (or with a hand mixer), place the dry ingredients (flour, baking powder, salt, and sugar) and mix on low speed for about 30 seconds or until blended. Add the butter and half of the egg mixture. Mix on low speed until the dry ingredients are moistened. Increase the mixer speed to medium and beat for about one minute to aerate and develop the cake's structure. Scrape down the sides of the bowl. Gradually add the remaining egg mixture, in 2 additions, beating about 30 seconds after each addition to incorporate the egg and strengthen the cake's structure.
Scrape the batter into the prepared pan and smooth the top with an offset spatula or the back of a spoon. Bake for about 55 to 65 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean. If you find the cake browning too much as it bakes, cover with a piece of lightly buttered aluminum foil after about 30 minutes. Remove the cake from the oven and place on a wire rack to cool for about 10 minutes. Remove the cake from the pan and cool completely on a lightly buttered wire rack

Lauki kheer

Ingredients : 400g grated bottle gourd (lauki), 1lt milk, 1/4 cup condensed milk or 300g sugar, pinch cardamom powder, few strands of saffron, 1 table spoon ghee, nuts & raisin
Method : Peel the skin of the bottle gourd and scoop out the seeds, grate them and squeeze out the water from this. Take an Indian wok (kadai)  and add ghee into it. put grated bottle gourd into it and saute for 5-8 mins on medium flame. on the other side boil the milk and reduce it 3/4 of its quantity. Add condensed milk and stir well. Add the bottle gourd to the milk mixture and let this boil in milk for 10 minutes in a low flame.Switch off the flame and add cardamom powder, garnish with few saffron strands & nuts. Can also be served chilled :)

Kachumbar Salad

INGREDIENTS : 1 Radish, 1 Cucumber, 2 Onions, 2 Tomatoes, white vinegar, fresh coriander leaves, salt, pepper, 2 green chili
 METHOD : Cut the vegetables into small dices. Finely chop coriander leaves and green chili. Put them in a bowl. Add salt and pepper according to your taste and half cup vinegar. Mix well and let it rest for 5-10 mins. Serve with the main course (indian)

Today's recipe - Bhindi masala

Ingredients: Onion and tomato based gravy,  1 sliced onion, 1 round  spoon refined oil, amchor (dry mango powder), 750gm half fried bhindi(lady finger) with both the ends removed
Method: take an Indian wok and lit the gas on. Put 1 round spoon refined oil in it. then add the sliced onion into it and cook till it become golden in color. Put onion and tomato based gravy and mix well.
add bhind(lady finger) and 1tea spoon amchor. stir it. slow down the gas, put lid on the top and cook till 5mins. serve with chapati or paranthaa (these are indian breads)

Recipe for today :
Tomato And Onion Based Gravy:-
Ingredients - 3 chopped onions, 2 chopped tomatoes, dry masala [2 tea spoon dhania powder (coriander powder), 2 tea spoon garam masala, half tea spoon haldi powder(turmeric powder) , 1 tea spoon red chili powder], salt, ginger garlic paste, refined oil .
Method - take an indian woke (karai), turn on the gas, put 2-3 round spoon refined oil, heat it abit, put chopped onions , cook them till they get golden brown, add 1 and a half spoon ginger garlic paste, cook it, slow the gas, put dry masala in the woke, add a round spoon of water to it , cook till aroma start coming, add tomatoes and salt, medium the flames, cook for 10 minute and the gravy is ready :)
